Apologies for being dumb but when you turn the centre dial it shows things on the oled. As there seems to be a lack of instruction manual for this wheel could anyone tell me what the 4 different options are (A - D)?

The attached photo is where the dial is set to B

    Its for the different APM modes to control what the clutch paddle axis is doing.

    This is also mentioned in the Quick Guide, which came with the wheel.

    Ok, so next question. I've watched the advanced clutch bite point video but am I right in assuming you need the podium advanced paddle module for it to work?

    yes, the MPM doesnt have the Clutch Paddles of the APM.
